Peaches & Cream Overnight Oats

 

These creamy overnight oats capture the flavor of stone fruit season. Make them when you have an abundance of peaches/nectarines, or when your fruit is slightly overripe but still usable.

Peaches & Cream Overnight Oats

serves 2-4

  • 1/2 cup raw cashews

  • 2 ripe peaches/nectarines, plus more for topping, pitted and sliced

  • 2 tablespoons maple syrup or honey

  • 1 teaspoon vanilla extract

  • pinch sea salt

  • 1 cup rolled oats

  • 2 tablespoons chia seeds

  • toppings of choice

In a high-speed upright blender, combine the cashews, peaches, maple syrup/honey, vanilla, salt, and 2 cups water. Blend on high until very smooth.

In a large bowl, combine the oats and chia seeds. Pour the peach cashew mixture over top and stir well to combine. Distribute between jars or containers if needed or keep in the bowl, refrigerate overnight. Enjoy the next day, topped with more fresh peaches/nectarines and other toppings of choice.

It would be fun to play around with the fruit included in the blended mixture. Try other stone fruit or berries, adjusting the amount of sweetener to the sweetness level of the fruit used.

If you exclude the peaches/nectarines, this is a great, basic overnight oats recipe. Make them plain, then really go wild with the toppings, or add cacao for chocolate oats.
